Summer Fun List

What an incredible summer we have had so far! We have been extremely blessed with sunny and hot weather since May, and we even experienced a temperature record in the Netherlands this week... 37 °C is something I NEVER imagined possible in this country. Fortunately, we are staying here to enjoy it. We do not have any holidays planned until September and I will be focusing on this fun bucket list:
1. Bake a peach cobbler
I baked this cobbler from Joy Wilson's (Joy the Baker) book: Homemade Decadence. You can find an alternative recipe here. This was my first peach cobbler ever, it was on my to-do list for a couple of years!
2. Go on a day trip
We went to Den Bosch on a Saturday afternoon. You can read about it here.
3. Go dancing
I signed-up for a salsa class and am finally back on the dance floor!
4. Summer Fridays: since March, I have my Fridays off. Now that the weather is good, I want to force myself to spend them partly outdoors.
I tried my best to go outdoors when it wasn't raining or when I didn't have a baking or social commitment.
5. Eat watermelon: The weather is cooperating and I expect a good crop!
I've made a couple of times this simple recipe made out of freshly-cut watermelon, feta cheese, olive oil and chopped mint. It's the perfect summer salad!
6. Pick some fresh strawberries
